Shokupan is Japanese milk bread with a long history. Its fluffy, light texture made it a household staple as Japan's eating habits changed after World War II. In recent years the style has evolved: the even softer, sweeter "premium shokupan" has gained wide popularity in Japan, prized for its enhanced softness and sense of luxury.
UnD's Almond Milk Bread
UnD's Almond Milk Bread continues this premium shokupan tradition, made with almond milk in an original recipe. The texture is soft and moist, the flavor subtly sweet — enjoyable toasted or plain. It is available in UnD's online shop.
From Toast to Pop-Ups
The same bread and dough run through UnD's menus. Butter toast and the cream egg sandwich are built on sliced Almond Milk Bread. Nama donuts — soft, airy donuts made from the same dough — have been served at UnD pop-ups and catering events, including a one-day pop-up at Hudson Wilder in DUMBO that sold out within one hour. For PORTER's 90th anniversary pop-up, the dough became a limited melon bread in collaboration packaging.
