For usucha, Ren is UnD’s highest grade. It is Uji matcha made only from Okumidori and Yabukita selected from the early May first flush.
For 20 days before harvest, the leaf is shaded to limit light. It grows slowly, concentrating sweetness and umami. The tencha is then stone-milled slowly, giving the matcha a clear profile and smooth texture.

The Art of Usucha

Uji tea has been shaped for more than eight centuries by the Yamashiro basin and by the accumulated practice of shaded cultivation, tencha making, blending, and milling. Ren places that inheritance in usucha, the preparation in which aroma, sweetness, umami, and bitterness are read with the greatest clarity.
Usucha is the thin preparation of matcha. With more water and less tea than koicha, it does not ask for density. It asks for clarity: sweetness, umami, aroma, and bitterness held in exact proportion.
Ren is composed for that kind of bowl. Exceptionally fine first-flush tencha is selected from Okumidori and Yabukita, then slowly stone-milled. The aim is not force, but a clean and complete expression.

Ren's first-flush leaves are steamed and dried without rolling in a brick-lined tencha furnace. Heat held in the brickwork is released gradually, while hot air removes moisture through to the center of the leaf.
The result is tencha with the color, aroma, and clean structure needed for usucha. Slow stone milling follows, but the clarity of the finished bowl begins earlier, with the way the shaded leaf is dried.
In usucha, there is space around every note. Ren opens with quiet sweetness, gathers into umami, and finishes without heaviness.
It is matcha for the moment when the tea itself is enough—prepared simply, served without distraction, and remembered for its composure.
